Cinnamon hot chocolate

This hot chocolate is the perfect pick me up for a cool day – warm spicy and sweet. Be warned that the smell of freshly ground cinnamon is delicious…and may lead to the need for further cooking.

Cinnamon hot chocolate

Serves: 1 Cooking Time: 20 minutes

Ingredients

  • 1 cup coconut milk
  • 2 teaspoons raw cacao powder
  • 1 teaspoon raw honey
  • Sprinkle of freshly ground cinnamon – from one cinnamon stick

Instructions

Grind a cinnamon stick in a mortar and pestle – keep any left-over ground cinnamon in a jar for your next hot chocolate

Heat milk until steaming but do not bring to the boil

Add the raw cacao powder and honey to the milk and stir to combine

Sprinkle the hot chocolate with freshly ground cinnamon

Notes

I used Pureharvest Coco-quench coconut milk – this variety is a mix of coconut and brown rice milk so a little thinner than straight coconut milk and good for drinks. This hot chocolate is yummy with Rhubarb compote with strawberry gum and ginger on toast.
