  • Rhubarb shrub gin fix cocktail homemade: pickle twist on Jerry Thomas' 1862 Gin Fix recipe where the sugar, water and lemon juice are swapped out for a delicately spiced rhubarb shrub syrup and a little agave syrup. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The Fix or Fix-Up is one of my favourite vintage cocktails due to the elegance of the sour recipe - lemon, sugar, water, spirit - and the presentation using shaved ice and a fancy seasonal fruit garnish. The Fix dates from 1856 and was a sour pick me up cocktail or Fix-Up, closely related to earlier recipes for Punch using the formula strong, sweet, sour weak, although the spice element of Punch is missing in the Fix.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This rhubarb version of the Fix pairs the rhubarb of the shrub syrup with juniper in dry gin for a crisp and refreshing drink that is spiced via the shrub infusion with Australian indigenous cinnamon myrtle, lemon myrtle and strawberry gum. Crushed ice accentuates the refreshing properties of vinegar preserving the shrub syrup and the fresh juniper flavour of the gin. The shrub syrup uses a light style coconut vinegar, low GI cane sugar and a slow cold maceration method for bright fresh flavour and a delicate light pink coloured syrup. The rhubarb fix is garnished with an orange and rhubarb twist.

  • Improved blueberry shrub cocktail: homemade using in season blueberries infused with cinnamon, coriander, lemon, thyme, low GI cane sugar, preserved in light sweet sour coconut vinegar, served over crushed ice with soda water and improved with a port float. Garnished with fresh flowering thyme from my garden, fresh blueberries and a lemon twist. Inspired by Jerry Thomas' improved fine lemonade recipe - where sherry is added to enhance the flavour - here I have opted for port.

Choosing the vinegar when making a shrub syrup is key - as the flavour and style of the vinegar will greatly influence the end result - like matching wine with food. I chose a lighter style coconut vinegar with a delicate sweet and slightly sour flavour to allow the blueberries to be the main focus of the shrub. Shrubs are a great way to preserve abundant in season produce and to use up fruits that are a bit too soft or parts of veggies and herbs we usually throw away but that are packed with flavour such as herb stems.

  • Rose lavender dry martini: using homemade cold infused gin with juniper berries, rose petals, lavender flowers, orange peel, coriander and other botanicals, French Vermouth, orange bitters and an orange twist. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The first martinis were a sweet cocktail using sweet Old Tom Gin, sugar syrup, liqueurs and sweet Italian Vermouth. The Dry Martini featuring a dry style of unsweetened gin - London Dry or Plymouth - without the sugar syrup, liqueurs and sweet vermouth - paired with an equal amount of French Vermouth, a dash of orange bitters and citrus twist, was an invention of the 1890's. The lasting popularity of the martini is evident in recipes for dry martinis with orange bitters in cocktail manuals from the later 1930's although the ratio in these later recipes has changed to 2:1 gin to vermouth.

This home infused gin is not a true distilled gin created by a heat based distillation process but it does feature the flavour profile of a gin using juniper and a range of other botanicals, including lavender and rose cold infused with vodka. Making your own gin is such a lovely way to better understand the ingredients that go into gin to create different flavour profiles and what better way to show this off than in a classic vintage style dry martini cocktail. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

A versatile low alcohol refreshing drink with real protein rich ice cream and bubbly fermented lemon myrtle ginger beer that can be served straight up for a fermented ginger pickle twist on the classic Australian milk bar spider or turned into a boozy Victorian ginger spider cocktail with a shot of brandy.

Aquafaba is the cooking brine leftover from cooking chickpeas and can be beaten into stiff peaks like egg whites to incorporate sugar and other flavourings like macadamia milk and lemon myrtle for a no churn plant based ice cream.

Spider referred to a brandy and ginger beer cocktail in the 1880’s in Australia and by the 1930’s and 1940’s a spider was a ginger beer, syrup and ice cream milk bar concoction with a foamy spidery head minus the brandy.

I’ve recreated the milk bar version with a mildly alcoholic fermented ginger beer that you can easily serve as is; or if you want a soft drink skip the secondary fermentation; for a spider cocktail add a shot of your favourite brandy – pisco, cognac…

The Chilcano de pisco is a traditional Peruvian way of drinking pisco brandy with lime, bitters, ice and ginger ale. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
There are interesting theories as to the origin of this cocktail including an association with an Italian pick me up grappa based cocktail the Buon Giorno introduced to Peru in the 19th Century by Italian immigrants and then changed up for pisco instead of grappa taking on the name of Chilcano perhaps due to the common pick me up properties held by the cocktail and fish head soup chilcano de pescado. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Popularity of the Chilcano de pisco coincides with an international craze for highball cocktails in the 1900's - highball may refer to top speed of a steam locomotive when the ball of the pressure gauge sits at the top of the gauge thus 'highballing'. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
