Ferments | Fermented pickles

Ferments | Fermented pickles use a process of fermentation of fresh seasonal produce to create pickles, in contrast to vinegar pickles. I use a fermenting crock with a water seal that allows gases to escape during the fermentation process – this makes fermenting easy and enjoyable. I like to make my ferments with spices for added complexity in flavour. Fermenting is a lovely way to slow down, cook and eat seasonally – it is easy, but does take some preparation time.
