Ginger pear champagne cocktail uses a spiced ginger pear shrub syrup with lemon, a sugar cube soaked in bitters, champagne and a twist of lemon. A refreshing gingery aperitif with the delicate flavour of pears and the complexity of bitters, cacao, pepper, bay and lemon.

Shrub syrups love bubbles of all kinds and especially champagne – their concentrated syrups lend sourness from apple cider vinegar and complexity of flavours with spices and fruit. Shrubs are also a fantastic way to balance sour and sweet elements using fresh in season fruit, vinegar and spices in cocktails like my pear pickle sour.

Ginger pear champagne cocktail is a lovely light flavourful drink for a sunny spring afternoon.

 

Ginger pear champagne cocktail

Serves: 1 Cooking Time: 10 minutes

Ingredients

  • 1 sugar cube soaked in bitters
  • 30-60 mls spiced ginger pear shrub with lemon
  • Champagne
  • Twist of lemon to garnish

Instructions

Soak a sugar cube in bitters and add to a small champagne glass

Add the twist of lemon

Pour in the spiced ginger pear shrub with lemon

Pour over the champagne slowly to avoid the drink overflowing

Enjoy as an aperitif
