Ferments | Fermented pickles
Ferments | Fermented pickles use a from scratch process of lacto-fermentation of fresh seasonal produce to create pickles and fermented drinks, in contrast to vinegar pickles and shrub syrups. I use a fermenting crock with a water seal that allows gases to escape during the fermentation process – this makes fermenting easy and enjoyable. I like to make my fermented pickles with spices for added complexity in flavour. Fermenting pickles and making fermented sodas is a lovely way to slow down, cook and eat and drink seasonally – it is easy, but does take some preparation time. Fermented pickles and sodas can be used in pickle cocktails to add unique flavours.
Fermented Pickles
Fermented pickles such as sauerkraut are delicious with burgers and tacos, sandwiches and wraps or as a condiment where vinegar pickles would usually be used. Some of my favourite ferment recipes include:
- -beetroot with cinnamon sauerkraut
- -pink-purple cabbage sauerkraut with lemon myrtle and pepper berries
- -lemon myrtle ginger beer
- -strawberry ginger beer, great straight up or in a chilcano de pisco cocktail
- -fermented watermelon radish martini
- -pickle blood orange americano
